Potato salad with jersey royals

Summer salads edition

This is one of my favorite summer salads. Enjoy!

This is possibly the simplest potato salad ever!

Ingredients

6-8 Jersey Royal Potatoes  5 eggs 1-2 spring onions  2 tbsp mayo + 1 tbsp EVOO 1 tbsp soured cream- optional 1 tsp dijon mustard salt and pepper to taste juice of one lemon

In a pan add water and boil the potatoes for approximately 20 minutes or until cooked but still firm when pierced with a fork. Drain the water and allow to cool or speed up by holding under cold water tap for a few minutes.

Step 1

Add cold water to a small pan then add the eggs. Bring to a boil and boil for 4 - 5 minutes. Cool under a cold water tap for 5 minutes.

Chop the eggs and potatoes in cubes of about an inch. Chop the spring onions finely. Add them to a large bowl.

Make the creamy dressing by mixing the mayo, soured cream, oil, lemon juice, mustard and seasonings. Tips: Sub the cream with yogurt or add more mayo instead.

Step 4

Mix everything well together. Squeeze lots of lemon and scatter some chopped parsley or thyme.

As it is delicious, it is also nutritious because by cooking and cooling potatoes, the level of resistant starch increases .  Great news for your gut health !
