These juicy buttermilk chicken burgers are grilled to perfection and topped with a creamy avocado dressing—an easy and healthier BBQ dinner. Slather that dressing thick!
750gchicken pieces (approx. 6 chicken breast and boneless thigh slices)
2tbspolive oil
½tspsalt
½tspblack pepper
1heaped tspsmoked paprika
1large garlic clove(or ½ tsp garlic powder)
2heaped tbspbuttermilk
For the creamy avocado dressing
1ripeavocado
1tbspolive oil
½tspsalt
½tspblack pepper
1smallgarlic clove(or ½ tsp garlic powder)
1lime(zest and juice)
1tbspmayonnaise(or Greek yogurt)
1tbspsour cream or crème fraîche (optional)
1dashSriracha sauce(or chili flakes, optional)
To Serve
6-8Burger buns (brioche, sourdough rolls, or your favorite)
Lettuce leaves
2Sliced ripe tomatoes
Instructions
Marinate the chicken:
In a bowl, combine olive oil, buttermilk, smoked paprika, salt, pepper, and garlic. Add the chicken and coat well. Leave to marinate for at least 30 minutes or up to overnight in the fridge.
Prepare the avocado dressing:
Mash the avocado in a bowl or small food processor until smooth. Stir in olive oil, lime juice and zest, garlic, salt, pepper, mayonnaise or yogurt (and crème fraîche, if using). Add Sriracha or chili flakes if you want a little heat. Set aside in the fridge.
Grill the chicken:
Heat your barbecue or grill pan to medium-high. Grill the chicken for 7 minutes on one side then 3 minutes on the other side, or until fully cooked and lightly charred at the edges.
Assemble the burgers:
Cut and toast the buns if you like. Spread avocado crema on both halves, then layer with lettuce, grilled chicken, tomato slices, and the top bun. Serve with extra dressing on the side—things might get a bit messy, but that’s so worth it!

If you use chicken breast, butterfly them so that you get the same thickness throughout.
