Pea and ham soup in soup maker recipe

This pea and ham soup delivers on flavor in a big way. The sweetness of the peas perfectly complements the smoky saltiness of the ham and you'll achieve a velvety smooth consistency thanks to the soup maker.

Equipment

  • 1 Soup maker or food processor with saute, cooking and blending functions
  • 1 frying pan optional, if you want crispy ham bits
  • 1 spatula to scrape the soup maker bowl down
  • 1 Chopping board or a vegetable dicer
  • 1 knife

Ingredients
  

  • 2 tablespoons olive oil
  • 2 medium onions medium to fine chopped
  • 1 clove of garlic minced
  • 100 g shredded ham hock
  • 100 g thick cut ham diced and lightly sauteed until crisp
  • 500 g frozen peas
  • 2 vegetable stock cubes
  • 500 ml water
  • 100 g sour cream
  • Salt and black pepper to taste
  • Fresh mint leaves and parsley for garnish
  • 2 tablespoons Lemon juice

Instructions
 

Prepare the ingredients

  • Peel and dice the onions. Prepare all of the other ingredients so that they are ready to be added, this dish comes together fast.

Saute Function:

  • Add the olive oil and chopped onions. Cook until softened and fragrant, stirring occasionally (myTokit Omnicook uses the blades to stir,so no stirring for me, it takes only 3 minutes).
  • If you don't have a saute function, I thoroughly recommend sauteing the onions in a frying pan before adding them to the soup maker.

Add Peas, Ham and broth

  • Stir in the frozen peas and shredded ham, minced garlic and add the vegetable stock (or cubes and water) to cover the peas.

Cook everything

  • Let the soup cook in the soup maker (this will depend on the model). Mine cooked for 12 minutes. If unsure, try a pea after 10-15 minutes to make sure it's cooked but still vibrantly green.

Fry the ham bits

  • Meanwhile, if you are using thick cut ham, slice it in small pieces and fry gently in a drop of olive oil in a frying pan. Set aside on a plate to drain on kitchen paper until ready to top the bowls.

Blend the soup

  • Close the lid of the soup maker tightly and select the appropriate setting for a smooth soup. Let the soup maker work its magic! ( On mine,it takes up to 3 minutes to get a smooth aerated texture).

Season:

  • Give it a taste to gather if you need more salt, add salt and black pepper to taste. Add the sour cream, and a little squeeze of lemon if you are using.
  • Give it a quick blend to incorporate everything.

Serve:

  • Once the soup maker has finished, ladle or pour the soup into bowls.
  • Garnish with fresh mint and parsley leaves. Top with the crispy ham bits and anything else you fancy!

Notes

To keep this soup vibrantly green, try the peas to check if they are cooked after 10 minutes and cook a few more minutes if necessary.
Add cold water only in the soup maker.
Make sure the lid is closed tightly when you cook the soup or blend it.
Go to town with toppings, that's the beauty of soups!
