Ingredients you’ll need

  • Sourdough bread – sliced and toasted, I started with a wholesome rye mix sourdough bread which I made myself, but you can use store-bought.
  • Ricotta cheese – I beg you to use full-fat creamy and fresh ricotta.
  • Blueberries – I used fresh, but you can use frozen if you want, just thaw in advance or make a quick jam.
  • Lemon – zest only, goes so well with blueberries, a timeless flavor combo!
  • Sea salt flakes – brings all the flavors together and enhances the sweetness.
  • Maple syrup to drizzle, but honey also works.
  • Icing sugar – optional, a light dusting.

How to make blueberry ricotta toast (step-by-step)

Time needed: 15 minutes

A gorgeous and easy blueberry and ricotta toast recipe, with simple ingredients, vibrant flavors and colors promising a luxurious yet quick breakfast or brunch!

  1. Toast ! Toast!

    Start by toasting your sourdough slices until golden brown and crispy.

  2. Warm and smash the blueberries

    Meanwhile, tip half of the blueberries or a handful in a sauce pan and warm them on a low to medium heat. Smash them gently but not fully with the back of a fork or a potato masher. They will burst gently and release their flavor-filled juices. Blueberries in a saucepan in their juices

  3. Make a purple rainbow!

    In a medium bowl, pour the warm blueberry puree and add half of the ricotta cheese. Add the maple syrup, sea salt flakes and the lemon zest. Give everything a quick mix to get the most cheery vibrant purple blueberry ricotta spread.

  4. Layer up

  5. Top and take a bite!

    Top each toast with the rest of the blueberries, drizzle extra maple syrup and scantily dust with icing sugar if you fancy.

  • If you have more time, whip the ricotta, Whipped ricotta will have an even smoother creamier texture.
  • To get a softer toast, you can toast the bread in a skillet with a little oil or butter, a little bit like French toast.
  • Use fresh, ripe blueberries for the best flavor and texture.
  • Get zesty: Don’t skip the lemon zest—it adds a delightful brightness to the dish.
  • Don’t skip the sea salt flakes – they elevate the flavors and add a delightful crunch.

You can make the blueberry ricotta in advance and spoon in an airtight container. It keeps well in the fridge for up to two days. But you want to toast the sourdough freshly and assemble just before you serve.

  • 250 g ricotta
  • 150 g blueberries
  • 1 lemon zest only
  • 2-3 tbsp maple syrup to drizzle
  • 1 pinch sea salt flakes
  • 4-6 slices sourdough toast
