Barley Stuffed Peppers

Barley’s been in my regular rotation for a while now – mostly because I get bored of defaulting to pasta and rice for everything, and it’s an easy way to get a proper wholegrain into the week by meal prepping it at weekends. These barley stuffed peppers are where a lot of that barley ends up: a weeknight dish that felt tidy, something cheesy and a bit elegant to plate up, but with real substance packed into a neat parcel rather than a side dish. It also had to hold up as a work lunch the next day – and it does, the flavors actually settle and improve overnight, so I’ll often make extra on purpose.

One thing worth knowing before you start: I like my barley soft and properly seasoned, not just boiled in plain water. I cook mine with a chicken or vegetable stock cube in the pan, so don’t skip it if you want the barley to taste lovely rather than just bulk the dish out.

  1. Barley is a genius grain switch-up. If you’re leaning on pasta and rice most weeks, this is an easy way to bring wholegrain in.
  2. Better the next day. Made this one for work lunches specifically – the flavors settle overnight, so it’s worth doubling the filling.
  3. Filling and cheesy. Feels like a proper plated dinner, with a bit of comfort thanks to quite a bit of cheese.
  4. Five plants on one plate before you’ve even sat down – pepper, onion, mushroom, carrot, chickpeas.

Ingredient Notes

This dish relies on pantry basics, with barley, chickpeas, and mushrooms bulking that filling and feta, herbs, and lemon zest bringing the flavor. Here’s what you need:

For the peppers and filling:

  • Peppers, cored and halved. I like using different colors.
  • Barley – use pearl barley if you can and preferably cook it ahead to save time.
  • Onion
  • Mushrooms – any mushrooms you like, firm button or chestnut mushrooms work well
  • Carrot – grate a large one, it adds sweetness and moisture to the filling
  • Chickpeas – drain a can and mash some of them in the pan, they help bind the filling
  • Tomato paste – it makes the filling lovely and savory
  • Feta cheese – need I say it? Tangy and a little salty, it rounds up those veg and pulses so well.
  • Parsley or dill or both, lots of it
  • Lemon zest

Optional:

  • Egg, to bind the filling, although I used some aquafaba (chickpea canning liquid) instead
  • Grated cheddar or mozzarella, to top
  • Creme fraiche or sour cream, to serve

Notes: Cook the pearl barley in chicken or vegetable stock rather than plain water – I like mine soft and properly seasoned. Let it cool a little before mixing it in.

How to make barley stuffed peppers (step-by-step)

Time needed: 50 minutes

If you’re looking for a hearty vegetarian dinner, these barley stuffed peppers are packed with mushrooms, chickpeas, and feta and weeknight doable.

  1. Roast the peppers

    Core and halve the peppers. Brush the pepper halves with olive oil, add a sprinkle of salt and roast on a baking sheet at 200°C (400°F) for 20 minutes.Side-by-side of pepper halves brushed with olive oil before roasting, and the same peppers roasted and softened after.

  2. Saute the vegetables

    Dice the onion, grate the carrot coarsely and chop the mushrooms fairly small. Sauté the onion in olive oil until properly golden, about 5 minutes, then add the grated carrot, chopped mushrooms and sauté them for 5-7 minutes until there’s a bit of caramelization going.   3. Make the filling

    Drain the chickpeas and reserve some of the canning liquid. Add the chickpeas and mash half of the chickpeas into the mixture as you go. Off the heat, stir through the cooled barley, feta, chopped herbs and lemon zest.   4. Stuff and bake

  5. Top and serve

    If topping with cheese, add it for the last 3-5 minutes so it melts without drying out.
    Scatter with more chopped herbs and serve with creme fraiche or sour cream.

Flossie’s Tips

  • Season the barley properly. Cook it with a stock cube, not just water, you want more flavor in those grains.
  • Coat the pepper halves with oil. With me, it’s all about flavor building, and a sprinkle of salt on those oiled peppers makes a big difference. They caramelize in places, soften, and get a touch of sweetness after roasting. While still holding enough shape to fill with goodness.
  • Make double. I promise the flavors get even better overnight, so it’s worth making extra for work lunches.
  • You will end up with more filling than you need, but that’s a blessing, because you want to freeze it in small fist balls to stuff more peppers or even flatbreads or tacos for a lazy weeknight dinner.

variations and substitutions

  • Different grain: quinoa or farro work the same way if you’ve got a bag open in your cupboard.
  • Dairy-free: skip the feta and cheese topping, finish with a miso tahini drizzle instead of creme fraiche.
  • More substantial: stir in cooked lentils or shredded chicken if you want it heartier.

Can I make these ahead?


Yes – and in my opinion, they’re better for it. Make the filling a day ahead, or make a full batch and keep leftovers for lunch; the flavors settle and deepen overnight.

Can I freeze them?

Freeze stuffed but unbaked. Thaw fully in the fridge before baking, adding a few extra minutes if they’re still cold in the middle.

What can I use instead of barley?

Ingredients

Instructions

Saute the vegetables

  • Sauté the onion in olive oil until properly golden, about 5 minutes. Add the grated carrot and chopped mushrooms and cook for 5-7 minutes, until there's a bit of caramelization going. Push everything to one side, drop a bit more oil into the gap, and let the spices and tomato paste cook there on for a minute before stirring through.
    3 tbsp olive oil, 1 large onion, 250 g mushrooms, 1 carrot, 2 heaped tbsp tomato paste, 1 tsp black pepper, 1 tsp Harissa spices

Make the filling

  • Add the drained chickpeas. Mash half of the chickpeas into the mixture as you go.

  • Off the heat, stir through the cooled barley, feta, chopped herbs, lemon zest, and egg if using. Add a splash of the reserved chickpea liquid (aquafaba) if the mixture feels too dry.
    200 g pearl barley, 11/2 tsp salt, 100 g feta cheese, Handful of parsley or dill, Zest of 1 lemon

Stuff and bake

  • Transfer the roasted peppers to an oiled baking dish where they can sit snugly, and pack each half generously with filling. Bake at 200°C (400°F) for 12-15 minutes.

Top and serve

  • If topping with cheese, add it for the last 3-5 minutes so it melts without drying out. Scatter with more chopped herbs and serve with creme fraiche or sour cream.

Notes

Cook the barley in stock rather than plain water for the best-seasoned filling. If cooking the barley fresh, add 35-40 minutes.
Reserve the chickpea liquid when draining – a splash loosens the filling if it feels too dry.
You will have quite a bit of filling left, it’s great for meal prep, it freezes well or you can stuff more peppers another time.
